'El Cid' Tenderloin Fillets

El Cid: People of Valencia! I bring you bread!
 

 

What could be easier or more elegant than this preparation
of choice tenderloin fillets, served with a sauce laden with
shallots and mushrooms.

 

In a large, heavy skillet, melt butter over a high heat. Sear fillets 1 minute on each side. Lower heat and continue cooking, turning occasionally, until meat is done to your taste. Set aside on warm plates.

Using the same pan, sauté shallots 1 minute. Add mushrooms and sauté 1 or 2 minutes longer. Pour in cognac. Ignite and flambé, then add the cream.  Stirring, reduce the sauce over high heat for 4 or 5 minutes, until a spoon dragged through the sauce leaves a trail that closes behind.

Season with salt and pepper to taste. Spoon sauce over each fillet.

After a riveting battle scene

El Cid [Charlton Heston] lays siege to Valencia, catapulting food into its starving garrison; when the Valencians kill their evil ruler, Al Kadir [Frank Thring], they offer the crown to the Cid. He sends it to Alfonso [John Fraser], who rushes, hysterically gratified, to his side. But the Cid has been hit by a stray arrow. Method in His Madness

It was a small town north of Rome where we were building
the set for St. Peter's Square, which Michelangelo had designed.
 To walk those streets somehow put me usefully back
in the sixteenth century, as did the Carrara marble quarries, near
Florence. To stand there on the spot where he chose the block
of marble for his 'Moses' told me something about what
it was like to be that angry, driven man.

I finally touched him, I think, when I went back to the Sistine
  for the first time in years. Thanks to the Vatican and Fox, I saw
 it not as I had before, in a wash of tourists,  but high on
 a scaffold, alone with the incredible miracle Michelangelo had
 wrought there over the four years he was nailed to that ceiling.
 Surely no work of art was ever torn out of so much anguish,
against such odds. The physical obstacles against painting
anything there at all are overwhelming. To see what one man,
driven by his searing need to spend his talent, did here rebukes
all of us who call ourselves artists. We can only dream of his
infinite talent, but standing there within arm's length of what
he'd done, I was seized by the sudden conviction that the glory
of the ceiling sprang equally from his will - something all men
share. His talent rejected it, aching for marble to carve, but his
will and the pope's command drove him to make this among
the best paintings a man ever created. Will. I'd found
my key to Michelangelo.
